Thank goodness for Pamela and Crohn's Disease!

It all started when I heard that somebody I kind of knew was driving down to Utah after Christmas. I immediately called my mom and asked her if she could make a GF goodie box for me and send it back with them. Of course, being the good mom she is, stuffed a whole box with Rice Chex, Corn Crunchums, Envirokids rice bars, chocolate, brown rice flour, hot cereal mix, and a big bag of Pamela's Baking and Pancake Mix. Just imagine... a Celiac's dream box! Now, I am sure that you can get a bunch of this stuff here, but it isn't free, packed with love, and have a hand written letter to go along with it. I immediately dove into the cereal, but wondered what I should bake first.

I couldn't decide..... My sister, Meri heard that my mom had sent me extra fine brown rice flour and took it upon herself to talk me into making GF donuts. We have a weekly Skype date almost every Wednesday during Deakon's nap. We had done one other cooking Skype session, but it didn't turn out well. Her camera wouldn't work and I made the great decision to make ginger snaps and not buy all of the ingredients. But this time it worked out pretty good, although her donuts looked WAY better than mine (I stole pictures from her blog) mine tasted pretty darn good. I was pretty happy about making something! A week ago Saturday, Kyle's brother showed up and announced that he was going gluten free. He has Crohn's Disease and has heard from several people that eating GF helps. Man, I was SOOOO happy. We headed off to the GF bakery for some bread and lemon loaf...(heavenly). They do such a great job, but we have decided that because I have all of these good mixes we should do some baking ourselves. We have since made cinnamon raisin bread, sour cream coffee cake, and I made myself some yummy pancakes today. It feels so good to bake, and have someone to share with! I have never been happier about somebody having a disease before in my life! Thanks Bret! Here are some pics documenting everything but the coffee cake!

That is so awesome that you and Meri do Skype cooking togetheres! Such a cool idea! And that bread and those yummy treats look awesome, way to go girl!

I love how your family is so close! The whole dozen of you (plus some)! Those goodies looked really yummy. I wonder if gluten free tastes better than sugar free...
